Oolong tea is often called "un-fermented" or "semi-fermented" tea, blue tea, turquoise tea. It is produced in China. The leaf collection takes place in a strictly defined time. Immediately after collecting, the leaves are left in the sun. When they fade, they are harvested and shaken in bamboo baskets to rub the edges of the leaves. These activities (wilting and shaking) are repeated several times, alternately, until the leaves become yellowish. Then they are subjected to short fermentation (it accounts for 12-20% of the normal fermentation) and the smoking process. The leaves of this tea are never broken by twisting, they are always whole.
